Bora Tier

La Lisse Soie D’Ivoire, 100 % Chenin Blanc

"Soft ivory silk", which is the perfect description of this fresh yet textural Chenin from France’s south. A bright, lemony and densely fruity ensemble which has a long-lasting and pleasing finish.

PAIR WITH: Pair this wine with a nice herb-roasted dish or a seared tuna with kimchi. Soft-shell crab w/ a lemon aioli or red snapper w/ a mango sauce.

Cuvee Jean Paul Rouge, 70% Grenache, 30% Syrah

A classic Southern Rhône red; friendly and warming leafy, autumnal aromas and an ample, baked fruit palate. A delicious, uncomplicated, soft, fruity and very drinkable red.

PAIR WITH: Drink with hearty foods such as grilled meats and casseroles. Also great with BLT's, pizzas and mature, hard cheeses.

Krone Brut Rose, 92% Pinot Noir, 8% Chardonnay

Perfect ripeness of strawberries, white peach, with tangy cranberry freshness. Soft lemon citrus notes give way to mousse and toasted hazelnuts.

PAIR WITH: Enjoy with charcuterie, Brie & camembert cheeses. Seared Salmon or duck.

Le Mistral Tier

Gehricke Chardonnay, 100 % Chardonnay

Vibrant scents of lemon meringue, lime oil, and floral jasmine give way to a more tropical tone of pineapple and mango. Bright acidity on the palate is balanced with cream soda and candied lemon rind. The creaminess extends through the finish ending with a nice, complementary note of toasted baguette.

PAIR WITH: Sage Butter Chicken, Shrimp, Salmon, Fresh Vegetables

WORTHY, NAPA VALLEY BORDEAUX BLEND, 44%

CAB SAUV. 42% PETITE VERDOT, 14% MERLOT

Dense and purple, with tiers of earthy currant, blackberry liqueur, plum, cassis and violet flavors framed by ample tannins and sweet oak. A blend of declassified lots from Napa "cult wines."

PAIR WITH: Lamb, Steak, Grilled Vegetables, BBQ

CHARLES CHEVALIER BRUT D’HONNEUR CHAMPAGNE,

50% PINOT NOIR, 30% CHARD, 20% PINOT MEUNIER

Made in the classic tradition of the champagne houses of Aÿ. The grapes are matured in cool chalk cellars for five years before release. Depth, character and length epitomize the purity and finesse of this well-balanced Champagne. It moves easily from fresh apples to a soft and mineral driven finish.

PAIR WITH: Strawberries, raspberries, Fried Chicken or Oysters.
