Bora Tier

Cloudline Pinot Noir

The Cloudline Pinot color is a bright garnet that deepens at its core, with medium body, bright acidity and excellent balance. 25 percent of its fruit comes from the famed Roserock Vineyard in Willamette Valley. Aromatics dance and show red cherries, cranberry, a touch of vanilla and various dark fruits. The tannins are soft, and the finish is pleasing and full. This is a serious Oregon Pinot that way over delivers and is ready to enjoy now, but could lay down 3-5 years.

Food Pairing - Charred Chicken Thighs with carrots and Bok Choy. A hearty pasta. Charcuterie and a fire. Campuget Rouge

The Campuget Rouge is a garnet-red colored wine with a blue hue, fruit forward and fresh. Its scent of ripe fruit is dominated by black currants underlined with hints of spices and pepper. In the mouth, it is round and harmonious with long smooth tannins. Throw it in the fridge for a 15 minute chill and enjoy. A great summer sipper that shows red wine is appropriate year round!

Food Pairing - Taco Night. Pizza and a movie. Pork loin and roasted asparagus. Le Jade - Les Costieres de Pomerols

The color is a superb pale yellow with bright hues. The nose is elegant, with aromas of fresh fruit and citrus fruit especially grapefruit. Well-balanced with typical zesty acidity. A pure expression of the grape varietal, the wine shows how good Picpoul can be when grown on its favorite terroir!

Food Pairing - Oysters. Shrimp Cocktail. Light & Citrus forward Salads.


Le Mistral Tier

Drappier Carte d’Or Champagne Comprised of 75% Pinot Noir, 15% Chardonnay, and 10% Pinot Meunier - this is one of the best champagnes on the market today. Drappier’s sense of substance is real, and comes in part from the high proportion of Pinot Noir The nose shows peaches and apricots, biscuit, and a touch of ginger. This all makes for a wonderfully food-friendly Champagne, and one of the best many have never heard of. You don’t find many Champagnes with this commanding presence, this complexity, and such a reasonable price. Food Pairing - Roast Pork. Oysters. Fried Chicken. Roserock Pinot Noir This beautiful 279 acre vineyard sits on a South facing ridge in Southern Eola-Amity and is known for producing wines with edge, power, and grace. A beautifully floral waft begins on the nose with attractive aromas of fresh, sliced strawberries and cherries, as well as sweet-spiced blueberry pastry. The palate has very elegantly stated tannins and fine, fresh-strawberry and red-cherry flavors. Pure elegance. Food Pairing - Grilled Hanger Steak. Sausage Cassoulet. Charred Lamb. Boomtown Syrah Rich and concentrated, this Syrah has flavors of ripe dark fruit, black pepper, and light hints of coffee. Full-bodied and opulent, the wine also has a distinct spicy note on the long finish. This is an outstanding gem that overdelivers and gets better with each glass. A truly special showing of Washington fruit, and I believe, a foreshadowing of wine to come. Food Pairing - Hamburgers. Grilled Meats & Veggies. Hard cheeses.
